Chicken wing drummettes, 1 + 1/3 kg ( 3 lb )
For the marinate:
Onion, 2 Unit large ones, chopped finely
Red pepper, 2 Unit chopped finely
Paprika, 2 tbsp (smoked if possible)
Garlic, 3 Cloves, chopped
Limes or Lemons, 2 Unit juice and zeist
For the dressing:
Butter, 2 tbsp
Hot sauce, 1 tbsp like tabasco or better
Limes or Lemons, 1 juiced
Materials and Methods
I do the hot wings on a 3 stage method:
first I marinate then I steam and finally I barbecue them.
Mix all the ingredients of the marinade and coat the wings.
Let it seat covered on the fridge for 20 mins minimum.
On a steamer or a colander inside a big covered pan steam the wings for 15 to 20 minutes or until they are cooked inside.
Let them rest a little uncovered to dry.
I find that using a square clamshell wire mesh makes it very easy to flip and saves a lot of time, so if you have one put them inside, but they are by no means necessary.
just put them on the grill and turn them from time to time until golden brown and delicious.
That’s the easiest part: Just melt the butter in a small pan then put the other ingredients in it. slow simmer for about 3 minutes and then toss the wings in a big bowl with the dressing
