Mint, 2 bunches (epic if you can find)
Limes or Lemons, 1 Juiced
Olive oil, 3 tbsp

I am a fool for epic mint, so what?
I found it again on the local vegetable market and I brought a bunch. I brought a bunch of bunches, actually.
I did a large kibeh recipe and even then I was left with 2 bunches.
They were about to go stale so I had to use them.
This is one of those dead easy recipes that I feel almost ashamed of posting, but bear with me, I will need the mint paste on the next post.
Just process together the mint leaves and the juice and the olive oil
If you don’t have a processor, as I didn’t have since last year use a blender, it is more tricky but it works.
On a blender the secret is wetness, it has to keep the wet paste aspect or it will not blend.
Add the juice and the oil first and a few leaves, blend until pureed. Add move leaves, puree again. repeat until done. You might need to add more oil or juice if using a blender.
When you are done just place it in a air-thigh container in the fridge. You might add a drizzle of oil on top of the paste if you want.
Careful: It is fresh and not “canned” so use in less than 3 days for best flavor.
